Beta-carotene is one of the most common isomers of carotenoids. It is a polyene pigment with a conjugated double bond composed of isoprene residues as a unit. It is a dark reddish-purple to dark red glossy rhombohedral hexahedral or plate-like microcrystalline crystal or crystalline powder. Has a slight odor and offensive taste.
Insoluble in water, propylene glycol, glycerol, acid, and alkali, soluble in carbon disulfide, benzene, trichloromethane, slightly soluble in ether, petroleum ether, cyclohexane, and vegetable oil, almost insoluble in methanol and ethanol.
Dilute solution is orange or yellow, orange to orange-red when the concentration increases; unstable to light, heat, and oxygen, not acid-resistant, but more stable to weak alkalinity; not affected by reducing agents such as ascorbic acid, heavy metal ions, especially Fe3+, can prompt its discoloration; good coloring performance for oily foods.
