What is Allin?
1. Allin is an organic compound,molecular formula is C6H11NO3S, is one of the main bioactive substances is garlic, accounting for 0.6%-2% of garlic dry weight.
2. As a unique non-protein sulfur-containing amino acid in garlic, accounting for 0.6%-2% of garlic dry weight. It is highly soluble in water and insoluble in pure anhydrous ethanol, chloroform, acetone, either and benzene. White needle-cluster crystals can be obtained by crystallization of dilute acetone and ethanol. Modern medicine shows that allicin has many pharmacological effects, such as anti-tumor, synergistic lowering of blood pressure, anti-bacterial and anti-toxic, scavenging of free radicals, liver protection and anti-diabetes. It`s a sulfur compound unique to garlic.
